COFFEE STORY

Benjamin Paz, or as we affectionately call him Benny and the Jets because the man is always moving and shaking. This man is a game changer in Honduras and within the Specialty Coffee Industry. As the son of a dry miller in the Santa Barbara region, this man has coffee running through his veins and the well-being of people in his heart. When asked what projects we could start in the micro-region of El Cielito he immediately jumps into the need to build a school so the next generation of coffee producers could establish themselves. It’s this heart and the sound of reggaeton music recommendations that solidified Benjamin Paz as a dear friend and a relationship that Remedy is honored to be a part of. 

Now let’s talk about variety. This coffee is a beautiful representation of when variety finds the right terroir to flourish. The Parainema (Pare.ee.en.em.uh) variety was created within a lab to solve for the drought and leaf rust that was destroying the farms of Santa Barbara. This hybrid of Timor, a hearty variety known to withstand droughts and rust with a mild flavor profile, and Villa Sarchi, a variety with high acid and a delicate sweetness, turned out to be the perfect marriage when combined with the temperate climates of the Santa Barbara mountains.

We love to brew The Wizard with a pour over, but this coffee will give you a cozy fall feeling, however you choose to brew it!
